COURTNEY’S BIRTHDAY
As you all know…I had a minor breakdown last week but I am better now. On Courtney’s birthday I decided that we were not going to sit around and be sad and that we were going to celebrate her! Off we went to Chili’s for dinner because Courtney liked Chili’s. What she really liked best was sushi but sushi makes me want to gag, so you know, sorry Court, that wasn’t happening.
As we ate supper we went around the table talking about favorite memories of Courtney. My husband said something especially sweet. I won’t mention it here because her ex husband frequents this blog (very creepy) and it is private. But it was the most memorable comment of the night. Going out turned out to be a very good idea.

After we were done eating I ordered a piece of chocolate cake and asked the waitress to bring it out with a candle in it. I didn’t tell her we had a birthday. I just wanted for our little family to sing Happy Birthday to Courtney up in heaven.
When she brought out the cake all of the waiters and waitresses came over and started singing a big loud happy birthday song to all of us. It totally shocked us and all of our eyes got big and our mouths were open. I was freaking out that one of them was going to ask us whose birthday it was…and then I was going to bawl right in the middle of the restaurant.
As it turned out, they never did ask whose birthday it was. As they were walking away from our table I heard one of the waiters say, “By the looks on their faces I am guessing that was a pretty scary rendition of Happy Birthday!”
I know if Courtney was there with us she was cracking up!
When they left we all sang Happy Birthday to Court and the feeling that night was very sweet.

Have ya’ll been watching? I am swooning now that it is back on the air. I love that show! The funny thing is my second favorite show is 24. I know. I am a complicated woman.

The Madonna episode was so fun! I especially liked watching the Cheerios on the stilts! That was amazing!
DINNER TONIGHT: GARLIC CHICKEN FARFALLE (BOW TIE PASTA!)
I found this recipe on Becky Higgins Web Site and decided to try it out. Good call.
16 oz. Farfalle pasta (bow ties)
1 c. heavy whipping cream
3-4 chicken breasts (boneless, skinless)
2 to 3 cloves garlic, crushed
1 Tbsp. pepper (I used a little less)
1/2 c. butter
1 lb. bacon, crumpled
1/2 c. shredded Parmesan cheese
1 (12 oz) bottle mesquite marinade
Cook the chicken in a crock pot for 6 hours on low in the mesquite marinade. Once the chicken is done cooking shred it up.
30 minutes before you are ready to serve cook the pasta according to the box directions. Once it is cooked and drained add the chicken to the pasta.
In a sauce pan melt 1 stick of butter and cook the crushed garlic in it. When the butter is melted add 1 cup of heavy whipping cream and stir it on low for 3-4 minutes. Add the crumpled bacon (I just ripped it into pieces), cheese, and pepper to the sauce and whisk until well blended.
Add the sauce to the chicken and pasta and toss it up!
This was actually pretty easy to make considering the chicken cooked in the crock pot all day. I also cheated and used the ready cooked bacon. I hate cooking bacon. It bugs.

Side note about Becky Higgins.
Of course you die hard scrappers know who she is and may even have a few of her books laying around. I have always loved her and was surprised to be looking through one of my mom’s old Creating Keepsakes magazines to see a layout by Becky that I liked where I recognized the kids in the pictures. When I looked closer I realized the kids pictured in the layout were my cousins kids!
I called her up and asked her about it and how THAT happened. My cousin Kathy is totally chill and she was like, “Oh yeah, Becky and I are friends. We were in the same ward in Arizona.” Like it was no big deal. So, just so you know, I am related to someone that knows Becky Higgins! Silly I know…but I think it is cool!
